Raw Vegan Avocado Parfait

Avocado Parfait

Nut Layer

1/2 cup Cashews (Soaked Overnight)
1/4 cup Almonds (Soaked Overnight)
1/4 cup Unsweetened Shredded Coconut
3 Dates
1 tsp Cinnamon
1 tsp Nutmeg

-Grind cashew and Almonds to a crumble
-Add dates and chop
-Add coconut and mix
-Add spices and mix

Avocado Blueberry Layer
1 Whole Ripe Avocado
1/2 cup Blueberries
1 tsp Agave
1 tsp Lemon Juice

-Add all ingredients and mix until smooth
-Spoon layers into a bowl or cup and serve
